Eating healthy snacks can be challenging when you are always on the go.

 

The key is to stock up on healthy snacks and make them easy to grab and go.

 

Consider pre-washing, cutting and packaging them into snack bags so your healthy snacks are always ready to grab and go!

 

Here are 25 healthy snacks everyone in your household can enjoy.  😉

 

  1. Greek Yogurt (my personal favorite is Fage with honey – it’s sooooo good!)
  2. Almonds
  3. Sugar Free Jello
  4. Frozen Blueberries
  5. Olives
  6. String Cheese
  7. Hummus
  8. Tahini Sauce (I am addicted to this!)
  9. Sliced Apples – kissed with Almond Butter
  10. Protein Shakes (I call them liquid meals)
  11. Edamame
  12. Peanut Butter
  13. Air Popped Popcorn
  14. Sunflower Seeds (I can eat bags of these like a chipmunk – No Joke! Ask my hubby 😉
  15. Hard Boiled Eggs
  16. Nonfat Cottage Cheese – toss in chopped fruit like strawberries, blueberries or mango (Delish!)
  17. Fruit Smoothies – with a scoop of protein
  18. Mixed nuts – walnuts, cashews, almonds, pistachios, pecans etc.
  19. Cherry Tomatoes
  20. Celery Stick with Cottage Cheese or Almond Butter
  21. Watermelon with Feta Cheese
  22. Avocado
  23. Grilled Veggies
  24. Sliced Carrots

Protein Packed Breakfast

We all know breakfast is THE most important meal of the day – yet, it can be so challenging to have a nutritional breakfast when your morning is so chaotic and you are always on the go.

 

Worry no more!

 

This recipe is super simple, fast and packed with nutrients your body needs to keep going.

 

Ingredients:

  • 3 egg whites
  • 1-2 cups of Raw spinach
  • Salt and Pepper

 

Directions:

Separate 3 egg yolks and only use the egg whites

Add a splash of milk while beating the egg whites (this will ensure they are nice and fluffy)

Add in desired amount of salt

Place under med heat until thoroughly cooked (only takes few minutes – you can speed up this process even more by keeping the lid on)

Season with pepper if desired

Place it on the bed of Raw Baby Spinach

 

BAM!! Protein packed breakfast!

 

I like eating mine without toast to keep my carb intake low.

 

You can accompany this with a cup of orange juice/grapefruit juice and / or cup of coffee of your choice.

 

So good…So simple.  My 4 year old daughter loves this breakfast and even eats the raw spinach! <3

What does “daily happiness” mean to you? 

Here is how you can find YOUR daily happiness!

 

Motherhood is truly a gift!

A gift that brings abundance of joy as we guide our precious kids through life while we build a life we call our own.

 

It’s not an easy job.  In fact, it’s one of the toughest job we will ever have.

 

When it comes to dealing with day to day chaos it can be so hard to remember to live in the moment and find daily happiness.

 

We simply get caught up in the web of chaos and drop in to survival mode.

 

Every phase of Motherhood comes with its own unique challenges and obstacles.  As our day to day demanding responsibilities grow, managing time becomes more and more challenging.

 

Let’s face it!  From day one, we get thrown in to it with no manual and no training.

 

It feels like overnight we are expected to develop habits that allows us to be experts in time management so we can be super moms managing the household, cooking, cleaning, managing our career, be the vixen in our relationship, make time for our health and fitness while somehow still have time left for our hobbies and desires.

 

As our kids get older our responsibilities as parents grow.  We require more time to help with homework, drive around town from one practice to another, find creative ways to prepare healthy meals that are quick, easy and nourishes their fast growing bodies and the list goes on and on.

 

We don’t scale back – we just do more.  As we continue to have more responsibilities we can start to compromise more and more.

 

Don’t get me wrong….  Life in general along with parenting is all about compromises.  It’s a necessity!

 

However, it’s critical that we maintain a healthy balance of compromise in all – the – right areas of our lives;  so that we are not compromising our own health and happiness.

 

Day after day as time becomes short in supply, it feels like one day we wake up to find that we lost ourselves in the process.

We realize we gave up our hobbies.  We neglected our health and fitness as we continue to hang on to the baby weight that makes us feel unsexy, and we simply lost energy to do anything.

 

My point is…we experience a lot of change all-at-once in a short period of time.

 

It’s critical that we understand the importance of nourishing ourselves as we nourish our families. Often times we forget to work on finding daily happiness.

 

We must make conscious effort finding daily happiness in everything we do so that we can find joy in it all – even doing the day to day chores!

 

When it comes to finding daily happiness, healthy balanced pleasure nurtures our growth.  This flow of desire is our creative energy, our passion for living.

If we deny or suppress our desires, we can become anxious, distant, depressed, emotionally uninvolved.

 

Here is a quick exercise that will help you find your daily happiness!

 

1.  List ways you might be denying or judging the natural flow of pleasure in your life and why?

Maybe Mother’s guilt is preventing you to take some time for yourself…

Maybe lack of time is preventing you to enjoy a hobby that brings you joy…

Maybe lack of money is holding you back in investing in yourself…

Maybe pregnancy weight is discouraging you to treat yourself to a new outfit…

 

On the other hand overindulgence in pleasure, whether it be sensory, food, drink etc., as a means of numbing or masking pain and fear, also leads to imbalance.

 

2.  Think of something you think you might be overindulging in, such as over eating or drinking or watching too much TV?

List 3 situations that can trigger you to have that behavior. Then, list a response to each of these to bring you back to balance.

 

3.  Now think about what calm happiness feels like in your body.

Do you laugh and smile more?

Are your muscles relaxed and your shoulders are down?

Do you feel relaxed?

How does your breathing sound?

 

Compare that to how the body feels when it’s is sad, anxious, stressed or worried. 

Write down your responses, note down your breathing pattern, ease and muscle tension.

 

4.  Now think of your day to day routine, ask yourself what can you change today to bring more happiness, joy and fun into your day to day tasks and responsibilities?

How can you make each experience an enjoyable one?  Even for something mundane like doing the dishes.

For me personally, I love to light up a candle while doing the dishes.  Smelling that beautiful candle in my kitchen brings me joy and make my dish washing experience a bit more enjoyable 😉

Practice saying yes! to your happiness and desires!  Make a conscious decision to bring joy in your life with everything you do!

I am a HUGE advocate of Mommy Me Time.

 

I believe in my core Mommy Me Time is not only a necessity but an absolute MUST and should be part of your daily routine.

 

Every Mom is a super hero!

 

YOU were hand-picked by higher power to be your child’s Mom (a.k.a. Guardian Angel).  You are exactly who he/she needs to guide them through life.

 

With this big role comes a big responsibility to take care of yourself so in return you can be the super star you were meant to be in your most important role as a Mom.

 

One thing I know for sure is that everything points to Self-care!  Without self-care it’s impossible to be healthy – mentally, physically and emotionally.

 

If you are not healthy mentally, emotionally and physically everyone around you will suffer.

 

Without proper mental health, we lack patience.  For parents patience is a mandatory requirement.

Think about the last time you lost your patience and snapped at your kids.  The chances are you were exhausted, tired, burned out and most likely skipped a meal or two.  All of which effects your ability to manage stress, your mood and your interaction with those around you.

 

Commit to giving yourself 15-30 min a day towards doing something just for YOU!

 

To help you kick things off here is a list of 80 things you can do for yourself for your Mommy Me Time!

 

I invite you to take this list and add things that bring YOU joy.

Call it your “JOY List”.

Make it part of your routine to carve out “Mommy Me Time” and do something that brings you joy.

Banana Bread Muffins with a Healthy Twist

Time get smart with WHAT we cook, HOW we cook it and WHEN we cook it.

There is nothing worse than wasting your hard earned money on ingredients that go bad simply because you or your family didn’t eat it fast enough.

 

My family LOVES fruit and we stock up on it all the time.  I call fruit my “Healthy Fast Food”.  I love that you can just “grab and go” and it’s great for you!

 

Bananas are a must-have fruit in our household. We started to buy extra bananas because our kids love them so much and between the four of us, we polish them up so fast.

 

My husband Anthony and I sometimes would leave the last few bananas “just in case” the kids wanted to eat them.

 

Of course, Murphy’s Law – for some odd reason that would be the week none of the kids happened to want any bananas.  It would drive me “Bananas” to see them turn brown and get tossed away.

 

There is nothing worst then seeing your hard earned money go straight to garbage.

 

So I got smart about how to properly utilize over ripe bananas and put them to use in a healthy way.

 

Here is one recipe that specifically calls for over ripe bananas.

I LOVE this recipe!  It’s easy… simple… and kid friendly.

 

In fact, when I see the bananas turn brown I make an event out of it by getting the kids involved in the fun as we bake together.

Here is a recipe you will LOVE!

 

Ingredients

  • 1 cup white sugar (sometimes I will intentionally put a little less to reduce sugar intake)
  • 1 egg (room temperature)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 ripe bananas, mashed
  • 1/4 cup chopped walnuts
  • 1 teaspoon baking soda

 

  • Flaxseed meal (optional) – I like putting 2-4 tablespoons of Flaxseed to add an extra goodness and make it even healthier. It will change the consistency of the batter.  My recommendation is to individually add in to some of the muffin tins and see if you like it before you mix it in the entire batter. 

 

TIP:  You can custom add walnuts, raisins, cranberries etc. in individual muffin tins like you see below vs. the entire batter.

This way everyone in the household can enjoy to their liking.  😉

 

Banana Bread 2

 

Directions

Preheat oven to 350 degrees F (175 degrees C). Place muffin cups in muffin tin, or grease with a little butter.

  1. Mix sugar, oil, and egg until creamy and light yellow.
  2. Add bananas and walnuts. (recipe works great if you decide to leave the walnuts out as well – my kids are not big fans of walnuts)
  3. Add flour, baking soda, and salt. Stir until completely smooth.
  4. Spoon the batter into the muffin tin. (I like using ice cream scooper – keeps the sizes consistent)
  5. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

 

HOT TIP:  They are great for on the go breakfast and as a snack in kid’s lunch box!

 

My kids who are 6 and 4 LOVE them!

Meal Planning Made Simple!

For a busy Mom Meal Planning is a MUST!

Meal Planning will save you time, money not to mention your sanity!

Here is a Step-by-Step Plan to help you jump start your Meal Planning journey while taking the stress out of healthy cooking and putting joy back in the kitchen.

 

#1.  Meal Planning requires a System!

In order to start meal planning, you must first have a system in place.  Your meal planning system should be custom to what works for you and your family’s needs.

Don’t let this process overwhelm or stress you!

It might seem like a lot of work in the beginning but once you get your Meal Planning System in place you will be able to rinse and repeat it.  You will develop your own rhythm and meal planning will soon become a breeze!

Your system should include a weekly meal planner, shopping list and recipes.

Start by setting aside some time to plan.

 

#2.  Create a Binder for your Recipes

Consider keeping a meal journal. (Especially when you are trying out new recipes)

 

Document the following…

  • How long did it take you to prepare the meal?
  • Was it kid friendly?
  • Was it fast and easy?

 

This step will help you identify which recipes to plug into our weekly meal planning each day of the week and which recipes to stay away from based on your schedule for the day / week.

 

#3.  Maintain a “Master Shopping List” to use for your weekly Meal Planning and Grocery Shopping

Instead of making a shopping list to use for each time you go grocery shopping, consider keeping a “Master Shopping List”.  This will save you so much time.

Include everything you will need veggies, snacks, fish, meat, dairy, fruit, drinks, cooking oils – everything!

As you build your recipe binder, this step will become easier and easier.  You can keep adding the ingredients you most use from your weekly meal planning in to your “Master Shopping List”.

 

#4.  Take ACTION!  It’s time to start Meal Planning

Using a calendar start your meal planning by writing down what you plan on having for Breakfast, Snack, Lunch and Dinner.

Be specific!  Include a main dish and side dishes.

When choosing your recipes consider what you have going on the week you are doing your meal planning for, so you can strategically slot in recipes based on time and complexity.

For example, my family and I have a sit down breakfast every morning.  While we have time to for eggs and toast during the weekdays – We don’t have time for pancakes, waffle or bacon as they take a while to cook.

So for my family, we save pancakes, waffles and bacon for the weekend 😉

 

HOT Tip:  Choose recipes based on time, complexity and with similar ingredients.  Don’t forget to plan for leftovers too!

 

#5.  Choose a shopping day

Now that you have your meal planning done for the week.  It’s time to pick a day to do your grocery shopping.  This is where your “Master Shopping List” comes in handy.

HOT Tip:  Place your master shopping list in a plastic sheet protector and keep it on your fridge.  As you use up your ingredients mark it off on your list using an eraser marker.  This will ensure your “to buy list” is always up to date.  When you are ready to go grocery shopping, snap a picture with your phone and you are good to go!

 

#6.  Prep your food

Once you get home from grocery shopping, prep your food.

Chop up your onions, veggies, dry your lettuce and wash your fruits.  This will help you save a ton of time when it’s time to cook your meals.  You can just toss and cook!  Makes cooking a breeze and gets rid of extra prep time.

 

#7.  Cook in batch

Consider cooking in batch or double your recipes.  You can freeze the extra meal for next week or for an emergency meal.

 

HOT Tip:  Keep a frozen cheese pizza in your freezer for an emergency meal.  You can jazz it up by putting your own delicious toppings (kale, sun dried tomatoes, bell peppers, onions – whatever you’d like.

We all have days where things get off track / schedule and we fall behind in grocery shopping or meal planning.  That frozen pizza will save the day and will buy you an extra day to squeeze in that meal planning and grocery shopping. 😉

 

#8.  Have FUN with your Meal Planning!

Get your kids involved and have fun with this process!

Ask them what their favorite meal is and what days should you make it.

Get them to help you with grocery shopping.  We call it “Treasure Hunting” as we look for ingredients going isle by isle.  It makes the time go by fast and we end up having fun in the process.

Once you have your first week’s meal planning done, start working on another weeks meal planning.  You can switch up the days, side dishes and come up with themes like Taco Tuesday, Soup Sundays, Pasta Night etc. and just mix it up.

Soon you will have library of weekly meal planning you can choose from.  Keep adding new recipes and use your meal planning journaling to add new meals in the mix.

How to be MORE Productive

Do you feel like you are always running out of time?

Do you watch your day fly by only to realize all the things you “really” wanted to get done still waiting for you?

Rest a sure, you are not alone!

For a busy mom time is always in short supply and the only way to milk each drop is to be productive!

Here are some tips that will help you. 🙂

#1 Stop looking at time as the enemy

Here is what I mean…

If you think time is running out or you don’t have enough of it you are making time the enemy.

If you think of time as your enemy – it will start to become a source of pain in your life.

We all get 24 hours in a day…

What’s critical is how you prioritize and maximize the time you have and focus on what is important.

YOUR ACTION Step: Prioritize! Prioritize! Prioritize!

#2 Create a morning routine and make it non-negotiable

Think about collection of things you do for yourself before interacting with the rest of the world.  This will set you up for success mentally, emotionally and spiritually.

For example, my morning routine includes meditation, setting up my intensions and goals for the day, exercising, preparing school lunches and having a sit down family breakfast.

YOUR ACTION Step:  Schedule 15 – 20 minutes on your calendar this week to create your own morning routine

Make your morning routine non-negotiable!

#3 Stay committed to YOURSELF!

It’s easy to let life get in the way. Take your commitments to yourself seriously and don’t bail out on them.

Remember this!

When you know what is important to you, it becomes very easy to spot and ignore what is not important and out of alignment with what you want.

Stay committed to YOU!

You don’t have say YES to every playdate or birthday party if it means you have to break your commitment to yourself.  😉

Be strategic with how you allocate your time.

YOUR ACTION Step: Before you commit to an impromptu playdate. Check in with your calendar – have you fulfilled your commitments to YOU?

Did you get the workout in you wanted?

Did you have the “quiet time to yourself” you’ve been wanting?

THEN ask yourself. Can I have this playdate next week instead? Is this really a priority for today?

Stay on course with your commitments to yourself. No playdate is more important then your sanity. 😉

#4 Make time to Workout!

Schedule at least 30 minutes of “sweat time” in to your busy schedule.

Working out not only improves your stress level but it also increases your ability to focus.

It optimizes your brain power and your mood.

YOUR ACTION Step:  Schedule your workouts into your calendar.

Remember! It’s not real until it’s in your calendar.

Pick a time slot when you are highly motivated to workout.

For example:  One thing I know for sure about myself is that IF I don’t work out before lunch it will never get done.

I have “zero” energy left to work out in the afternoon. I am too busy helping with homework and driving all over town to Soccer, T-Ball, Karate and Ballet practices.

So my workouts are scheduled for a morning time slot.

Make each task intentional.
